At Gibson’s Mill, you don’t just stay in Hobart, you live it. Wake up in a heritage-listed waterfront building where exposed brick and timber meet modern comfort. Cook in your own fully equipped kitchen, or step outside to Salamanca Market, waterfront bars and the CBD within minutes.
The Space:
Stay in our two bedroom self-contained apartment and have Salamanca markets, Brooke Street Pier and the Mona Ferry just minutes walk from your doorstep. It's an easy base for couples, friends, family or a business trip.
The layout keeps everything on one floor. A full kitchen with sleek appliances opens onto a generous dining and lounge area, with a workstation tucked to one side. Both bedrooms have king beds and plenty of wardrobe space, and the bathroom sits between them.
Located in the heart of Hobart's working waterfront, Gibson's Mill is written into Tasmania's history. From the mid-1860’s Gibson’s Flour Mill, a family owned business operated in the period building, becoming the largest flour mill business in Tasmania until it sold in 1979.
Large arched windows run through the living spaces, a reminder of the building's 1890 façade. Three generations of the Gibson family milled flour here from the 1860s until 1979, and the warehouse bones (exposed brick, steel, timber beams) are still doing the work they always did.
The apartment has ducted air conditioning and a Euro laundry with washer and dryer. Hobart's town centre, Salamanca Place and Battery Point are all a short walk away.
A few local favourites worth the short walk: Aloft on Brooke Street Pier for dinner, Daci & Daci for pastries in the morning, and the Telegraph next door for a pot of Cascade.
Gibson's Mill is an aparthotel rather than a hotel. There's no front desk, but your check-in details arrive by email a few days before you get here, and our team is on hand if you need us.
Please note the stay is located near the waterfront precinct, some apartments experience late night noise from adjacent restaurants, clubs and pubs, particularly on a Friday and Saturday night.
Guest Access:
Guests have full access and private use of the entire property.
