Tucked away amongst the Essex countryside, Gin and Toffee is the sort of place that encourages you to slow down from the moment you arrive. Once part of the old “Gin and Toffee” railway line, this beautifully restored railway carriage now offers a peaceful escape for two, surrounded by open fields, quiet lanes and the gentle rhythm of life on the farm.
Mornings begin slowly here. Open the door to fresh countryside air, make a coffee and sit out on the decking listening to birdsong as the farm wakes up around you. Inside, the carriage feels cosy yet bright, carefully restored to keep its character while offering all the comforts needed for an easy stay.
There’s a comfortable king-size bed to sink into after long countryside walks, a compact kitchenette for simple suppers and lazy breakfasts, and a private shower room that makes returning from muddy adventures all the more welcome.
As the evenings draw in, light the firepit, pour a glass of something chilled and settle beneath the dark skies with nowhere else to be. There are books, board games and peaceful surroundings for slower evenings indoors, while outside the fenced garden gives both you and your four-legged companion space to properly relax.
The nearby town of Thaxted feels almost untouched by time. With its timber-framed cottages, winding streets, medieval guildhall and striking windmill standing proudly above the rooftops, it ’s the kind of place best explored without a plan. Stop for lunch in a country pub, browse small independent shops or simply wander and take it all in.
Thaxted is also known for its long-standing Morris dancing traditions and rich history, giving the area a character entirely its own.
Beyond the town, the surrounding countryside is made for walking, cycling and slower days outdoors. The charming market town of Saffron Walden is within easy reach, while those wanting a little more adventure can spend the day exploring Cambridge or heading towards the Essex coast before returning to the quiet comfort of the carriage.
Gin and Toffee is not about packed itineraries or rushing from place to place. It’s about quiet mornings, countryside air, cosy evenings by the firepit and finding joy in doing very little at all.
